The Kennedy White House’s Famous Cream Cheese and Strawberry Delight

President John F. Kennedy’s favorite dessert was a creamy, fruity dessert called Cream Cheese and Strawberry Delight. Below is the original recipe, along with an alteration using Cool Whip and strawberry pie filling.

Cream Cheese and Strawberry Delight

I made something simpler than this original recipe. But I use Cool Whip in place of the heavy cream called for in the original recipes. I also use a can of strawberry pie filling.

  • 1 lb. cream cheese, room temperature
  • ½ cup sugar
  • 16-oz. package frozen strawberries, sliced, thawed, and drained
  • 1 cup heavy cream, whipped

Using an electric mixer, beat the cream cheese in a large bowl until smooth and creamy. Stir in the sugar and blend well. Fold in the strawberries and the cream cheese with a spatula. Spoon the mixture into a 1-quart mold, smoothing the top with the spatula. Freeze for four hours or longer. Serve with the champagne.
